Green Beans with Potatoes

This simple North Indian recipe is another of my favorites, and is provided by my mother, Mrs. N. Kochhar, of New Delhi, India. You can leave out the hot pepper if you wish.

Ingredients

  • 1 (one) pound fresh green beans
  • 1/2 (half) pound potatoes, peeled
  • 3 tablespoons cooking oil
  • 1 (one) inch piece fresh ginger
  • 1 hot green pepper (remove stem, slit lengthwise)
  • 1/2 (half) teaspoon cumin powder
  • 1/2 (half) teaspoon salt
  • 1/2 (half) teaspoon turmeric powder

Wash and cut beans into small (1/4") pieces. Cut potatoes into 1/2" pieces. Peel and cut ginger into small (1/8") pieces.

In a medium size saucepan, heat oil over medium heat. Add everything except the cumin powder. Mix well. Cover and let cook over meadium-low heat. Add about 2 tablespoon water if it looks too dry. Stir approx. every 5 minutes. Let cook covered a total of about 20 minutes.

When done, sprinkle the cumin powder on top and mix well. Serves four.
