Cauliflower and Potato

This North Indian recipe is another of my favorites, and is provided by my mother, Mrs. N. Kochhar, of New Delhi, India. Cauliflower is a winter vegetable in N. India.

Ingredients


Wash and cut cauliflower and potato into medium pieces. Peel the ginger and cut into very small pieces. In a large frying pan heat the oil over medium heat. Add all the ingredients and mix well. Lower heat to medium-low and cook the vegetables until tender, stirring every 3 to 4 minutes. May also add a small amount of water as needed. Serve while warm as a side dish. Serves four.
